Thanksgiving Leftovers.




What to do with all that food the next day? (or days?)




My very favorite part of Thanksgiving is the green bean casserole, which I make an enormous pan of and eat (splashed with soy sauce) until every last bit of it is gone. But some of the other dishes take more thought. (And to all of you who don't celebrate Thanksgiving - Happy Second to Last Thursday in November!)



#1. Cranberry Bread. I always make cranberry-orange sauce from scratch, and after we've eaten all we can straight, I throw together some cranberry bread. Yum. Smear a little honey butter on it, make some tea...aaahh.










#2. Sweet Potato Pancakes. We are a family of sweet potato fiends, so I also make a big pan of sweet potatoes. I top them with butter, brown sugar, fresh grated nutmeg and lemon rind. No marshmallows. We'll eat them like this for a day or so, but after that I smoosh them up and we have sweet potato pancakes.









#3. Hot turkey sandwiches with mashed potatoes and gravy. This is where my southern roots start showing. It has to be on white bread and drenched in gravy. We buy a meatless Turkey loaf (which is really excellent), so even the non-meat eaters get "turkey" for Thanksgiving. I could eat these sandwiches all day long. And sometimes I do.





Bam! No more leftovers!

Wow, you are so inventive! The morning after Thanksgiving the fifteen-year-old girl and I drive my mom (a faithful reader) to the airport, we have lunch out (Fair Oaks Pharmacy) and then we begin the Christmas shopping!!! Before we leave, however, we start with leftover:

Pie! It makes an excellent breakfast, with ice cream or whipped cream, of course!

We always send my mom on the plane with a turkey sandwich complete with all the fixins: cranberries, stuffing, and turkey.

After a long day of shopping we come home and heat up the rest of what is left for dinner on Friday night, and by then it is all pretty much gone.

i think i gained 10 lbs just looking at the photos...even tho i wouldn't any of that stuff. well, maybe #3 lol

We are very traditional. Turkey sandwiches. With mashed potatoes and my beloved pink salad. Friday is like Thanksgiving the rerun. Yum.

Sweet RC. Just caught up on your previous post. Sending my love to you, Sasquatch and your family. It must be very hard but it will pass. How old is Sasquatch? Is it hormone problem, inbalance or something?

oh man i would kill for leftover pie.

as a matter of fact, i might make a pumpkin pie this weekend. (thanksgiving is at my brother's. there are seldom any leftovers. today there will be 15 of us, i think.)

Yummy. I love all of those. I am doing Thanksgiving at my house this year. I bought the biggest fresh turkey I could find and am looking forward to leftovers all weekend.

I am eating at Mother & Father Pi's house today, so will be bringing back gobs of leftovers for Mr. Pi, who has to work. Sadly, I will only get to watch him eat them. But he loves turkey so much that maybe I'll be able to nibble on the sweet potatoes.

By the way, when I ate meat, it was mandatory that hot turkey sandwiches be on white bread. It should be against the law to use any other kind!

You are way organized. I have made turkey soup already with veggies and noodles for the weekend. That's about it. I decided not to take anything else home from our dinner at my mom's. Just the turkey carcas.

we had tday dinner at steve's mom's. she said she was going to put the rest of the turkey into her other fridge. steve's like...you're going to put THAT in the fridge (basically nothing left of it)? and she said yes, that she was going to make turkey soup. ummm i don't think steve ever heard of making turkey soup from what's left of the turkey before lol
