same old coleslaw?


We're getting together Memorial Day with the two families we usually celebrate holidays with. We'll let the kids run wild, drink the host's lethal margaritas and officially usher in the summer with an industrial sized bottle of bug spray. It's going to be pretty low-key, just the way I like it.


So low-key in fact that we've not even gotten together to figure out the food. It'll be a potluck as always, and I can't figure out what I want to take. I'm working today, so it needs to be something that can be thrown together quickly since I'll have to shop and cook on Monday. I'm tossing around all my potluck go-to dishes, but nothing is really firing me up.


Any ideas?

JoAnne and I made a wonderful kind of Brazillian salad lasr night.

Her goes, roughly---\\

2 cans black beans drained and rinsed\\

2 tomatoed chipped up
one half white onion chopped

1/3 bunch cilantro
Mix the above with 5 TB olive oil
2 T balsamic vinegar

mix together--put in fridge for one hour.

Add one avacoda cut up.

Had it last night--truly excellent.

i'm not that much of a cook so i have nothing. hope you get to relax and just enjoy yourself. you deserve that. tomorrow i have to get w june cleaver and her husband, his kids, his sister..blah! hope we don't have to stay too long lol

Fatoush of course. Just crack that Arabic cookbook. Or what my mother in law called Syrian Potato Salad. Dice the boiled/peeled and cooled potatoes
Chopped parsley
Chopped scallions
Salt, Pepper
Lemon
Olive oil
Toss.

No mayo to kill you if left out in the sun!

smoked fish, crackers, and cheese. it's all you need. with white wine.

My favorite of all time with margaritas is a simple black bean dip. Serve it with chips for dipping or with tortillas or pitas for something more substantial.

one chopped onion
three cloves garlic
1/2 cup picante
can of black beans (drain & rinse)
one chopped jalapeno
monterey jack cheese
fresh chopped cilantro

Saute the onion until tender. Add the garlic and saute for one minute. Add the picante sauce and the black beans. Smash the black beans while stirring. Warm through, about five minutes. Turn off the flame, add remaining ingredients and mix well.

I double this recipe when taking it anywhere.

whoops! forgot the spices; add a half tablespoon of chili powder and a teaspoon of cumin with the picante and beans

OOOPS... I forgot the roasted red pepper in the Brazillian salad. Blacken it under the broiler, remove the skin and chop.

Also forgot the freshly ground cumin- 1 tsp. salt and pepper to taste.

Okay, I think that's it now.

No ideas on the potluck, but I will be happy to hear about all the lovely food that was there and about what you ended up bringing. it's been a long time since I've been part of an American potluck, remind me what it is like.

Yes, the same old coleslaw. Nuthin' wrong with coleslaw, and I have the hips to prove it.

Just catching up - that story about your elederly patient had me well and truly gripped - you sure can write a great tale girl. I found the post fascinating to hear from a medical perspective. Great stuff.

Definitely coleslaw or salsa and chips if you want to go the easy way.

I make a cheater's salsa by using 2 bottles of Salsa Ranchero and dressing them up with black beans (canned, drained, & rinsed), canned corn (drained), and chopped red bell pepper. I make a batch of this on hot weekends and Mr. Pi has it gone by Monday, or at the latest Tuesday.

Whatever you eat, enjoy the party to kick off summer. It hasn't even started here, but at least I have the weatherman's official okay to plant annuals....Memorial Day is our traditional time. Silly Michiganders--I've seen snow flurries in June here! We may not even be frost-free yet!

Waldorf Salad

4 apples chopped/diced: 2 green, 2 of your fave red(I use Braburn)
4 celery stalks sliced
1 cup mini marshmallows
3/4 cup raisins
1 cup chopped walnuts
2 TB sugar
2TB lemon juice
2TB milk
1 cup mayo

Mix it, chill and serve!

How about 2 cans bushes baked beans, pour into your own dish, heat and serve.

Or Sliced tomatoes, sliced Italian Mozzarella Cheese, a few springs of fresh basil leaves, Balsamic vinaigrette. Arrange everything on a plate, drizzle with dressing and serve.

Sorry, RC, I am an awful cook. This type of thing, I go to Wegmans and buy something. I just can't cook.

However, I did want to say, have fun. Sounds like the perfect way for you and your boys to spend Memorial Day.

Bowties w/ tomatoes, mozzarella, and basil:

Cook a 1-lb box of bowties.

Meanwhile, combine 2 lbs coarsely chopped plum tomatoes (or cherry tomatoes, halved) with 1-2 TB balsamic vinegar and 1/2 tsp coarse salt and let marinate while you

Saute 3 thinly sliced garlic cloves in olive oil(more if you like; I do) in a small skillet until tender. Remove from heat and add 1/4 tsp red pepper flakes.

Stir garlic mixture into tomatoe mixture, and add 8 ounces fresh mozarella cheese, diced and the cooled pasta. I also toss with about a cup of freshly grated parmesan and about a 1/2 cup of fresh basil leaves, cut in half.

It makes a lot, looks pretty, and everyone seems to love it!
